Carboxymethyl cellulose (CMC), also known as cellulose gum, is a water-soluble derivative of cellulose used as a thickening agent, stabilizer, and emulsifier in various industries. It's commonly found in food products, pharmaceuticals, cosmetics, and even non-food applications like drilling fluids and printing inks.
CMC is a white or lightly yellow powder, odorless, tasteless, and non-toxic. It's hygroscopic (absorbs moisture) and dissolves readily in water, forming a viscous solution.
Aplication
● Food: CMC is a common thickening agent in foods like ice cream, sauces, and beverages, helping to create a desired texture and preventing separation. It's also used in diet foods to mimic the texture of traditional foods.
